Ireland’s Dawn Meats and its UK subsidiary Dunbia are to install patented protein and fat recovery process technology developed by UK-based Agri-food tech company Elemental. This will enable the two processors to capture up to 15% (30-40kg) more edible food products (proteins and fats) from every beef carcase processed.
Used in a variety of products including ready meals, gravy and soup, the increased yield will not only help Dawn to improve carcase utilisation and create new products, but also deliver 20% of its annual scope greenhouse gas reduction target.
The two processors supply major retailers, manufacturers and food service operators across the globe, working in 50 countries and processing 300,000t of meat each year.
